Start by halving the Courgette lengthways and then slicing each half into about 1cm chunks. Dice up the Parsley, zest and half the Lemon and prepare the Garlic Clove (chop, grate, press).

Bring a pan of water to boil with salt for seasoning. Once ready add the Penne Pasta and cook until tender for approximately 10 minutes.

While the Penne Pasta cooks, heat a pan with a little oil and fry the Courgette until slightly brown (about 4 minutes). Add the Garlic Clove to the pan and fry into the Courgette.

Once the Courgette are done, bring the heat down and add the Creme Fraiche, Vegetable Stock and Water. Stir together and add a little salt and pepper for seasoning and simmer for a few minutes.

Add the King Prawns to the sauce and simmer for a few minutes until cooked (they will look pink on the outside). Drain the Penne Pasta and add to the sauce and mix it all together so all your Penne Pasta is coated in the sauce.

Plate up the King Prawns Penne Pasta evenly. Add a little salt and pepper to taste, a small squeeze of Lemon and scatter a bit of Lemon zest and Parsley on the top. Eat and enjoy!
